Chilli Picked Eggs

Who does not like picked eggs? Well why not give them a kick.

Locally we can get free range eggs from the roadside, many of which are double yoakers.

Bring a pan of water to the boil, place in the eggs carefully, after 10 mins pour out the water and let the eggs cool. Chop the chili into slices and place into the jar, peel the eggs and place into the jar, cover with vinegar, leave for several weeks in a dark cool cupboard.

I previous years we have made pickled eggs with beetroot, some with mustard and of course just in the picking vinegar
